Ingredients
For the Peanut Butter Mixture:
- 1 Β½ cups creamy peanut butter
- Β½ cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 cups powdered sugar (icing sugar)
For the Chocolate Coating:
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or butter (optional, for smoother melting)
Instructions
- Prepare the mixture:
In a large mixing bowl, combine the peanut butter and softened butter. Mix until smooth and creamy. Add the vanilla extract and stir well. - Add sugar:
Gradually add the powdered sugar, mixing continuously until a soft dough forms. The texture should be firm enough to roll into balls but still slightly soft. - Shape the balls:
Scoop out small portions (about 1 tablespoon each) and roll them into smooth balls using your hands. Place them on a tray lined with parchment paper. - Chill:
Refrigerate the peanut butter balls for at least 30 minutes, or until firm. This step helps them hold their shape when dipping in chocolate. - Melt the chocolate:
In a microwave-safe bowl, melt the chocolate chips in 20β30 second intervals, stirring in between until smooth. Add coconut oil if desired for a glossy finish. - Coat the balls:
Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, making sure it is fully coated. Let the excess chocolate drip off. - Set:
Place the coated balls back onto the parchment paper. Refrigerate again for 15β20 minutes, or until the chocolate is fully set.
Tips for Best Results
- If the mixture is too soft, add a little more powdered sugar.
- If too firm, mix in a small amount of peanut butter.
- Keep the balls chilled while working to make dipping easier.
Serving & Storage
- Store in an airtight container in the refrigerator for up to 1 week.
- You can also freeze them for up to 2 months.
- Serve chilled or at room temperature for a soft, creamy bite.
Optional Variations
- Sprinkle crushed peanuts or sea salt on top before the chocolate sets.
- Use white chocolate or dark chocolate for different flavors.
- Add a crispy texture by mixing in crushed graham crackers or rice cereal.
